Apple cake with cookies and pudding (no bake)
Ingredients: 1.8-2 kg apples, 350 g popular biscuits (40 pieces), 350 g sugar, 4 packets of vanilla pudding, 650 ml water, 150 g raisins, 1 bottle of rum essence, 1/2 teaspoon cinnamon, a pinch of salt.
To prepare a delicious apple and cookie cake, the first step is to gather our ingredients. We start by soaking the raisins in rum to give them a deep and inviting flavor. This step is essential, as the raisins will add a sweet note and a pleasant texture to the final cake. While they soak, we take care of the apples. We peel the apples and cut them into small cubes, making sure they are evenly sized for even cooking.
In a saucepan, we put 500 ml of water together with sugar to boil. We stir gently to help the sugar dissolve completely. Once the sugar has melted, we add the apple cubes. It is important to let them soften a little, but without crushing them, so we will boil the apples for a few minutes, stirring occasionally. This process will allow the apples to release their flavors and become tender.
After the apples have been boiled, we dissolve the 4 packets of pudding in the remaining 150 ml of water, mixing well to avoid lumps. We add the pudding mixture over the boiled apples and let it boil for another 2-3 minutes, stirring continuously. It is essential to be careful, as we want the pudding to thicken slightly, providing a creamy texture and delicious taste.
Finally, we add the raisins, a pinch of salt, and a little cinnamon to enhance the flavor of the mixture. Now we are ready to assemble the cake. In a rectangular dish, we place a first layer of cookies, followed by a generous layer of hot apple cream. We continue this process, alternating layers, until we finish the 3 layers of cookies and 3 layers of apples, ensuring that the last layer is the apples.
Once the cake is assembled, we let it cool at room temperature, and then we transfer it to the refrigerator for 2-3 hours. This cooling time is crucial, as the cookies will absorb moisture from the cream, becoming soft and tasty. After it has been in the fridge, the cake will be much easier to cut and serve.
