Milk Slice Cake - A Delight for Special Moments

The Milk Slice Cake is a special recipe, filled with nostalgia and joy, that combines childhood memories with festive moments. This cake was my first attempt at creating an impressive dessert and, at the same time, the first significant culinary experience for my little girl, since we celebrated her first haircut. With a fluffy base and a delicious cream, this cake will surely become your family's favorite!

Ingredients:

*For the base:*
- 8 eggs
- 4 tablespoons of water
- 2 tablespoons of oil
- 12 tablespoons of sugar
- 11 tablespoons of flour
- 3 tablespoons of cocoa
- 1 teaspoon of baking powder

*For the cream:*
- 400 ml of liquid cream
- 400 g of condensed milk
- 1 packet of gelatin
- 50 ml of milk

*For soaking:*
- Caramel syrup

*For decoration:*
- Fondant (you can also use whipped cream or chocolate glaze)
- Decorative accessories (balls, edible flowers)

Step by Step:

1. Preparing the base:
Start by separating the egg whites from the yolks into two large bowls. Beat the egg whites with a mixer until you get a stiff and glossy foam. This step is crucial, as well-beaten egg whites will give the base the desired fluffy appearance.

2. In another bowl, mix the yolks with sugar, water, and oil until the mixture becomes smooth and creamy, about 5-7 minutes. Then add the flour mixed with cocoa and baking powder, gently folding from the bottom up to avoid deflating the mixture.

3. Slowly add the beaten egg whites and continue to carefully incorporate them. It is important not to mix too vigorously, as we want to keep the air in the egg whites.

4. Preheat the oven to 180°C and line a baking tray with parchment paper. Pour the mixture into the tray and level the surface with a spatula. Bake for about 40 minutes or until the base passes the toothpick test. Let it cool completely on a rack.

2. Preparing the cream:
Soak the gelatin in cold water for 10 minutes until it becomes soft. Meanwhile, mix the condensed milk with 20 ml of milk. After the gelatin is soaked, dissolve it in a double boiler with 30 ml of milk, making sure it does not boil.

3. Once the gelatin has dissolved, gradually add it to the condensed milk mixture. Whip the liquid cream until it becomes firm and fold it into the condensed milk mixture. Put the cream in the fridge for an hour, stirring occasionally to prevent it from setting.

3. Assembling the cake:
Once the base has completely cooled, cut it into two or three layers, depending on your preference. Soak each layer with the caramel syrup, which will add sweetness and moisture.

4. Spread the cream evenly between the layers, ensuring that each layer is well covered. After finishing assembling the cake, refrigerate it for 2-3 hours to allow the flavors to meld and the cake to stabilize.

5. Decorating the cake:
Once the cake has completely cooled, you can start decorating it. I chose to cover it in fondant, but you can use whipped cream or a chocolate glaze, depending on your preferences. Use decorative accessories to give it a festive and creative look.

- Gelatin: Make sure the gelatin is well hydrated. If used incorrectly, the cream may not have the desired consistency.
- Condensed milk: Use quality condensed milk to achieve a creamy and rich filling.
