Rice pudding with raisins and citrus

I propose a delicious recipe for rice pudding, inspired by the creations of Symonik and Mimmi, which combines the flavors of citrus fruits with the sweetness of raisins. This pudding is a quick and simple dessert, perfect for moments when you want to impress family or friends with something special. I assure you it will become one of your favorite dishes!

Preparation time: 15 minutes
Cooking time: 30 minutes
Cooling time: 30 minutes
Total: 1 hour and 15 minutes
Number of servings: 6

Ingredients:

- 1 L milk
- 200 g rice (preferably pudding rice, such as Arborio)
- 150 g granulated sugar
- 100 g raisins
- 3 eggs
- 3 packets vanilla sugar
- 1 tablespoon powdered sugar
- 1 tablespoon lemon juice
- A pinch of salt
- Zest of 1 lemon and 1 orange

Instructions:

1. Preparing the milk: In a large pot, bring the milk to a boil over medium heat. Add a pinch of salt, granulated sugar, vanilla sugar, and the zest of the lemon and orange. The citrus flavors will give the pudding a fresh note, and the sugar will sweeten the mixture.

2. Cooking the rice: When the milk begins to boil, add the rice. It is essential to stir occasionally to prevent the rice from sticking to the bottom of the pot. Let it boil for 20-25 minutes until the rice becomes soft and creamy.

3. Adding the raisins: When the rice is cooked, add the raisins and let it boil for another minute so they can swell and release their flavor. Raisins are optional, but they add a delicious texture and sweetness.

4. Cooling: After boiling, cover the pot with a lid, place it on a wooden board, and wrap it in two or three kitchen towels. This will help retain the heat and allow the pudding to cool gradually for 30 minutes.

5. Preparing the egg white foam: While the rice cools, separate the egg whites from the yolks. Beat the egg whites with a pinch of salt and a tablespoon of lemon juice until foamy. Then add the powdered sugar and continue to beat until you achieve a firm foam.

6. Combining the ingredients: Add the yolks to the cooled rice and mix well until fully incorporated. The consistency should be creamy, and the flavors should combine harmoniously.

7. Baking: Preheat the oven to 200°C. In a heat-resistant dish, place the rice mixture and smooth the surface. On top, add the egg white foam, spreading it evenly.

8. Baking in the oven: Bake the pudding for about 30 minutes or until the top becomes golden and fluffy.

9. Final cooling: After baking, let the pudding cool in the dish for a few minutes before serving. You can serve it warm or cold, depending on your preferences.

Serving suggestion: For an extra flavor boost, you can add a caramel or chocolate sauce on top of the pudding. Also, a spoonful of sour cream or Greek yogurt on the side will perfectly complement this dessert.

Variations: Instead of raisins, you can use dried cranberries or even chocolate pieces to add a decadent touch. You can also experiment with different flavors, such as cinnamon or cardamom, to give your pudding another dimension.

This rice pudding recipe is not only simple but also versatile, giving you the opportunity to play with flavors and ingredients. Enjoy your meal!
