To prepare a delicious plum cake, start by gathering the necessary ingredients. Make sure you have 4 egg whites, 4 egg yolks, 200 g of sugar, a pinch of salt, 6 tablespoons of oil, 50 ml of rum, 200 g of flour, and of course, fresh plums, about 500 g, which will add a sweet and sour taste to your cake.

The first step is to beat the egg whites until frothy, adding a pinch of salt to stabilize the foam. Use an electric mixer on high speed until the egg whites reach a firm and glossy consistency. Then, gradually add the sugar while continuing to mix. You will notice the foam becoming shinier and firmer, forming a perfect meringue.

Once you have a quality meringue, add the egg yolks, mixing at medium speed. This step is essential to incorporate the necessary air so that the cake is fluffy. Once the yolks are well integrated, start adding the oil, one tablespoon at a time, mixing well after each addition. The oil will provide moisture and contribute to the soft texture of the cake.

After adding all 6 tablespoons of oil, pour in the rum and mix gently. This will add a delicious aroma that will enhance the flavor of the cake. Now it is time to add the flour. Do this gradually, mixing with a wooden spatula in an up-and-down motion to avoid losing air in the mixture. It is important for the batter to be homogeneous while maintaining an airy texture.

After obtaining a slightly viscous paste, pour the mixture into a baking tray lined with parchment paper. Use the spatula to level the surface, ensuring it is evenly distributed. Prepare the plums by cleaning, washing, and cutting them in half, then removing the pits. Arrange the plum halves on the surface of the batter. Be aware that they will partially sink during baking, adding a rustic look to the cake.

Preheat the electric oven to 190 degrees Celsius and place the tray inside. Bake the cake for 35-40 minutes, until the surface turns lightly golden. Alternatively, you can set the oven to 200 degrees Celsius for a faster bake of about 30-33 minutes. Check if the cake is done by inserting a toothpick in the middle; if it comes out clean, the cake is ready.

Once you take it out of the oven, let it cool in the tray. Cut the cake into cubes or desired shapes without covering it. As it cools, it will become crispy on the outside and extremely fluffy on the inside, giving you a perfect combination of textures and flavors. Enjoy this plum cake alongside a cup of tea or coffee, savoring every bite!
