To prepare these delicious cake balls, the first essential step is to gather all the necessary ingredients. Start by taking the cake base that you prepared a day before, making sure it has been properly covered to stay fresh. Place the base in a large bowl and begin to crumble it with your fingers. It is important to remove any dry portions to achieve a uniform and fine texture.

Once you have a homogeneous mixture, add 2-3 tablespoons of apricot jam, depending on how moist the base is. I opted for 3 tablespoons, which allowed the mixture to become sticky enough to form balls. Start with 2 tablespoons and mix well; if you notice that the mixture doesn’t bind well, then add the third tablespoon. Use your hands to mix the ingredients to achieve a consistent and homogeneous composition, ideal for shaping.

From this composition, form about 15 balls the size of a small walnut with your palms. Carefully place them on a tray lined with baking paper or a non-stick surface and leave them in the freezer for 30 minutes to firm up.

Meanwhile, prepare the chocolate to coat the balls. Melt the dark chocolate and white chocolate either in a bain-marie or in the microwave, being careful not to burn it. Once the chocolate has completely melted, take the balls out of the freezer. Insert a plastic stick into each ball so that they resemble lollipops.

Now, it’s time to dip them in the melted chocolate. Make sure each ball is evenly coated so that the chocolate forms a delicious and glossy layer. After you have coated all the balls, decorate them according to your personal preferences. You can use colored sprinkles, grated coconut, or crushed almond pieces to add extra flavor and an attractive appearance.

The final step is to let the chocolate dry. Place the balls with the plastic sticks on a polystyrene base, ensuring they are spaced apart to avoid sticking. Once the chocolate has completely hardened, the balls are ready to be enjoyed, making them a perfect choice for any occasion. These little delights not only look spectacular but are also extremely tasty, ideal for delighting the taste buds of everyone who tries them.
