Fish Brine (III)

 Ingredients: 2 small fish (mackerel) 4-5 cloves of garlic 1 medium tomato thyme salt water oil for frying

To prepare a delicious fish dish, we will start by carefully cleaning the fish, removing all the entrails and scales to obtain fresh and juicy meat. After cleaning the fish, we will cut it into suitable pieces, ensuring that each slice is uniform, making sure they will cook evenly. The next step is to take a little flour and sprinkle it on each piece of fish, ensuring it is evenly coated. This flour coating will help achieve a crispy and golden crust when frying.

Meanwhile, we will prepare a deep pan in which we will heat the oil. The oil needs to be well heated before adding the pieces of fish, to avoid excessive oil absorption and to ensure even frying. When the oil is ready, we will carefully add the fish and fry it until it becomes golden and crispy on all sides. After the fish is cooked, we will remove it with a spatula and let it drain on a paper towel to eliminate excess oil.

In the meantime, we will put a pot of water to boil, adding a pinch of salt to enhance the flavors. When the water starts to boil, we will add the fried fish, letting it boil for a few minutes so that the flavors combine perfectly. During this time, we will take care of the tomatoes. We will roast the whole tomatoes on a tray in the oven at a temperature of about 180 degrees Celsius until the skin starts to peel off easily. Once roasted, we will take them out of the oven and let them cool slightly before cutting them into quarters.

The prepared tomatoes will be added to the pot with fish, and to further enhance the flavor, we will sprinkle fresh or dried thyme, according to preference. It is also important to adjust the salt so that the dish has a balanced taste. On the plate, we will add a little vinegar from the jar with peppers, which will provide a pleasant contrast and a note of freshness.
