Princess's Slippers Cookies
We begin our delicious recipe for "pillow" cookies, which will surely become the favorite of the whole family. The first step is to prepare the dough. In a large bowl, we cream the margarine with the sugar and vanilla sugar until the mixture becomes creamy and fluffy. This step is essential, as it will give the cookies a light texture and a special aroma. We then add the baking powder, the egg, the salt, and the warm milk, mixing well after each ingredient. These ingredients will contribute to the development of the flavor and structure of the cookies.
After obtaining a homogeneous composition, we start to gradually incorporate the flour until the dough becomes consistent, yet soft to the touch. It is important not to add too much flour, as we want to maintain the tender texture of the cookies. Once we have the desired dough, we wrap it in cling film and let it rest for about 30 minutes. This resting period will allow the gluten to relax, making it easier to roll out the dough later.
After 30 minutes, we divide the dough into two equal parts. One of them will be used immediately, while the other can be stored in the fridge for later use. At this point, we preheat the oven to medium temperature to warm it up properly. On a floured work surface, we roll out the first piece of dough into a thin sheet. From this sheet, we cut long strips, which we will transform into squares for the cookies.
We place the obtained squares on a baking tray lined with parchment paper. Due to our recipe, these cookies will not rise in volume, so we can place them closer together. Each cookie will be shaped like a pillow: we slightly raise the corners, and in the middle of each shape, we make a small indentation with our finger, which will later be filled with jam. We brush the edges with beaten egg to achieve a golden and appetizing crust.
After we finish preparing the first tray, we place it in the oven, letting them bake for about 10 minutes or until they become slightly golden. We proceed the same way with the second dough, and the result will be a delight for the senses. The "pillow" cookies are tender and delicious, perfect to be enjoyed with loved ones, especially on special occasions, such as a name day. With a recipe that produces enough servings, I ended up with 4 trays full of goodies. Enjoy your meal!
