We start this delicious recipe by preparing the sauce that will enrich the flavors of our pasta. In a pot, we heat a generous amount of olive oil, which will add a touch of flavor to the dish. Once the oil is well heated, we add the canned tomatoes, which will bring a pleasant acidity and vibrant color to the sauce. To this, we add the tomato juice, which will intensify the flavor and contribute to the consistency of the sauce.

For an extra flavor boost, we finely chop the garlic, making sure to remove the center to make it more digestible. The sliced garlic will release its flavors slowly, giving the sauce a deep taste. We season the mixture with salt, pepper, and a pinch of sugar, which will balance the acidity of the tomatoes. It is important to add a little water to achieve the desired consistency. We let the sauce simmer on low heat, allowing it to reduce by half, a process that takes between one hour and one and a half hours. This cooking time will allow the flavors to combine harmoniously.

Once the sauce has reached the desired consistency, we set it aside and add the tuna, gently stirring to avoid breaking the pieces too much. If the tuna is canned in oil, it is recommended to drain it well before adding it to avoid a greasy sauce. After integrating the tuna into the sauce, we let the mixture come to a boil, so that the flavors intertwine and become homogeneous.

In the meantime, we take care of the pasta. We boil the pasta in salted water, following the package instructions to achieve the al-dente texture, which will add a pleasant contrast to our sauce. After the pasta is cooked, we remove it from the heat and drain it. It is essential to rinse it immediately under cold running water to stop the cooking process, thus keeping its firmness.

Finally, we add the pasta to the tuna sauce and gently mix, ensuring that each piece of pasta is well coated with the flavorful sauce. We serve the dish immediately, perhaps with a drizzle of olive oil on top and, if desired, with a little grated Parmesan for extra flavor. Enjoy your meal!
