Preparation time: 15 minutes
Baking time: 45 minutes
Total time: 1 hour
Number of servings: 4

Ingredients:
- 4 cleaned mackerel fish
- 1 deep plate full of diced colorful peppers
- 1 leek
- 4 potatoes
- 1 plate of fresh spinach, blanched in salted water
- 60 g butter
- Salt and lemon pepper (Kotanyi grinder)
- Lemon and lime, for serving
- Fresh dill, for decoration
- Tomato sauce, for serving

Instructions:

1. Preparing the clay pot: Start by soaking the clay pot in cold water for 10 minutes. This step will help retain moisture during baking, resulting in a juicy dish. After soaking, let it drain and dry slightly.

2. Preparing the spinach: Wash the spinach well under cold running water, then blanch it in salted water for a few minutes. This will help retain its color and nutrients. Once softened, remove it and place it at the bottom of the clay pot.

3. Seasoning the spinach: Use the Kotanyi grinder to sprinkle salt and lemon pepper over the spinach. These spices will add a fresh and aromatic taste to the dish.

4. Preparing the fish: Wash and clean the mackerel, removing the head and intestines. Cut them in half and fill them with diced peppers and a few pieces of butter. Don’t forget to season with salt and lemon pepper for extra flavor.

5. Tying the fish: Use leek strips to tie the fish so that the filling remains intact during baking. Sprinkle a little more lemon pepper for an intense flavor.

6. Preparing the potatoes: Peel the potatoes or leave them unpeeled if they are new. Use an apple corer to remove half of each potato, creating adorable "mushrooms." Place them next to the fish on the bed of spinach.

7. Baking: Cover the clay pot with a lid or aluminum foil and place it in a preheated oven at 180°C for 30 minutes. After this time, remove the lid and leave the dish in medium heat for another 15 minutes until the fish is golden and appetizing.

8. Serving: Remove the pot from the oven and drizzle tomato sauce over the potato mushrooms. Sprinkle some grated cheese on top for a creamy taste. Serve the dish hot, alongside slices of lime and lemon, and garnish with fresh dill for a fresh touch.

Variation suggestion: You can replace spinach with other greens like parsley or basil, and for a more intense flavor, add a few slices of garlic between the layers of vegetables.

This mackerel in a clay pot recipe is not only tasty but also full of color and flavors, turning any meal into a true culinary celebration. Try it and enjoy the compliments from your loved ones!
