Duck soup with noodles

 Ingredients: 500 g wild duck meat (can also be domestic) 200 g onion 150 g bell pepper 200 g carrots 100 g celery 1 parsley root (50 g) 300 g tomatoes 1/2 pack of vermicelli green parsley salt

To prepare a delicious duck soup with vegetables, we will start by preparing the necessary ingredients and utensils. In a pressure cooker, we will boil the duck meat, cut into suitable portions, in about 3 liters of water. We add ½ tablespoon of salt to enhance the flavor of the meat. It is important to ensure that the water is cold at the beginning to allow the meat to cook evenly.

Meanwhile, we take care of the vegetables. We wash and peel the carrots, celery, and onion. We grate them on a large grater so that they integrate perfectly into the soup. These vegetables will add not only flavor but also a pleasant texture. After the meat has started to boil, we add the grated vegetables to the pot with the duck. It is important to let them boil together to release their flavors and combine with the taste of the meat.

Tomatoes, an essential ingredient to give a fresh and sweet taste to the soup, are blanched in boiling water for a few minutes. After their skin has come off, we peel and puree them well, preferably using a blender, to obtain a fine puree. The resulting tomato juice will be added to the soup just before introducing the noodles.

After about 30-40 minutes, when the meat is boiled and tender, we add the noodles to the pot. They will need about 5 minutes to cook, so it is essential to be careful not to exceed the time to avoid them becoming too soft. Once the noodles are ready, we pour in the prepared tomato juice, mix well, and let the soup simmer on low heat for a few minutes to blend the flavors.

Depending on individual preferences, we can adjust the taste of the soup with salt and Delikat seasoning, thus adding a touch of flavor. Finally, before serving, we sprinkle chopped green parsley over the hot soups, which will provide a color contrast and a fresh aroma.
