Rhubarb, with its slightly tart flavor and crunchy texture, is the perfect ingredient for a spring cake. In this simple recipe, we will turn rhubarb into a special dessert that will impress anyone who tastes it. Let's get started!
Ingredients:
- 400 g fresh rhubarb (washed, peeled, and cut into 2-3 cm pieces)
- 200 g sugar (2 tablespoons for the rhubarb and the rest for the batter)
- 250 g flour
- 100 g butter (melted)
- 2 eggs
- 1 packet of baking powder (about 10 g)
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of salt
- Powdered sugar for decoration (optional)
Step 1: Preheating the oven
Start by preheating the oven to 180 degrees Celsius. This step is essential to ensure even baking of the cake. While the oven is heating, you can prepare the baking pan.
Step 2: Preparing the pan
Line a baking tray (approximately 30x20 cm) with parchment paper or grease it with butter and sprinkle flour. This will prevent the cake from sticking and help it release more easily after baking.
Step 3: Preparing the rhubarb
In a large bowl, add the cut rhubarb and sprinkle the 2 tablespoons of sugar over it. Mix well so that the rhubarb is evenly coated with sugar. Let it sit for 10 minutes, allowing the sugar to draw out the juices from the rhubarb, enhancing the flavor of the dessert.
Step 4: Preparing the batter
In another bowl, beat the eggs with the remaining sugar (200 g) until the mixture becomes frothy and light in color. Add the melted butter and vanilla extract, continuing to mix. Incorporate the flour, baking powder, and salt, gently mixing until you achieve a smooth batter.
Step 5: Assembling the cake
Pour half of the prepared batter into the prepared tray, spreading it evenly. Then, add the marinated rhubarb, distributing it evenly across the surface. Cover with the remaining batter, ensuring that the rhubarb is well wrapped.
Step 6: Baking
Place the tray in the preheated oven and bake the cake for 35-40 minutes or until golden and a knife inserted in the center comes out clean. It is important not to open the oven in the first 30 minutes of baking to prevent the temperature from dropping.
Step 7: Cooling and serving
Once the cake is baked, remove it from the oven and let it cool in the tray for 10-15 minutes, then transfer it to a wire rack to cool completely. You can sprinkle powdered sugar on top for an attractive appearance. Served warm or cold, this rhubarb cake is delicious alongside vanilla ice cream or a dollop of whipped cream.
Possible variations:
- You can add some strawberries or raspberries to bring extra sweetness and diversify the flavor.
- Substitute some of the flour with ground almonds for a richer texture.
- Add spices like cinnamon or ginger for an extra layer of complexity.
This rhubarb cake is perfect for any occasion, being easy to prepare and full of flavor. Whether you serve it at a family meal or a party, it will surely win everyone's hearts!
