- 4 ripe bananas (about 500 g)
- 100 g unsalted butter
- 150 g sugar (you can adjust the amount to your liking)
- 2 large eggs
- Zest of 1 lemon (for a fresh taste)
- 100 ml freshly squeezed lemon juice
- A pinch of salt
Instructions:
1. Preparing the bananas: Start by peeling the bananas and mashing them in a large bowl using a fork or an immersion blender. It’s important to achieve a smooth paste, but don’t worry if there are a few small pieces left; they add texture.
2. Melting the butter: In a high-sided saucepan, melt the butter over medium heat. Make sure not to let it burn, just let it become liquid and release its aroma.
3. Mixing the ingredients: Once the butter is melted, add the banana paste, lemon zest, lemon juice, and sugar. Mix well until the sugar completely dissolves. This step is essential for achieving a uniform and delicious curd.
4. Cooking the mixture: Continue to cook the mixture over medium heat, stirring constantly to prevent sticking to the bottom of the saucepan. After about 10 minutes, when the mixture becomes thicker, add the eggs one at a time, mixing well after each addition. This is when the curd will start to develop a creamy and velvety texture.
5. Finishing the curd: Continue cooking the mixture for another 10 minutes or until it thickens enough to coat the back of a spoon. Don’t forget to stir constantly!
