Sorrel Sauce

To prepare a delicious recipe with sorrel, the first step is to ensure that we have fresh, quality ingredients. Sorrel, an aromatic plant, is a special ingredient, full of vitamins and minerals, that can add a unique taste to our dishes. We start by picking the sorrel from the garden. Although we do not weigh it, we can rely on our eyes to obtain an amount close to what is specified in the recipe.

Once brought home, the sorrel must be thoroughly washed. It is essential to check each leaf on both sides, as small snails or other insects can often hide. After ensuring that the leaves are clean, we can decide whether to break the stems or leave them intact.

In a large pot, we pour 5-6 tablespoons of olive oil or sunflower oil, depending on preferences. Then, we add the washed and prepared sorrel. Using a wooden spoon, we start to stir, so that the leaves gradually “melt.” This process takes about 3-4 minutes and is done over low heat, allowing the sorrel to release its aroma and transform into a vibrant green paste.

In another pot, we add the remaining oil and a few tablespoons of flour, which we sauté together for a few moments. This will form a roux that will thicken our dish. After sautéing the flour, we take the pot off the heat and incorporate the melted sorrel, mixing well to uniform the composition.

Then, we add warm water, stirring constantly to avoid lumps. We put the mixture back on the flame, being careful to let it boil. If the composition is too thick, do not hesitate to add a little water until it reaches the desired consistency.

After achieving a creamy texture, we season with salt and add a crushed garlic clove for extra flavor. We let it boil for another minute, then take the pot off the heat. The dish is served hot, alongside a spoonful of sour cream, mashed potatoes, and boiled beef, for a flavorful meal.

If you want to adapt the recipe for fasting days or during periods of fish allowance, the sorrel can be transformed into an excellent vegetarian dish that will delight all tastes. This simple and delicious recipe will surely bring a touch of freshness to your meals!
