Step-by-step instructions
1. Preparing the base
We start with preparing the base. Toast the walnuts in a non-stick frying pan without oil. Stir constantly to avoid burning. The toasted walnuts will provide a deep taste and intense aroma. Once they are lightly golden, remove them from the pan and let them cool. When cool, chop them into small pieces.
Now, cut the Turkish delight into cubes. A handy trick is to use powdered sugar to dust the Turkish delight before cutting. This will prevent it from sticking to the knife and make the operation much easier.
In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. It is essential that the bowl is completely clean and free of grease; otherwise, the egg whites will not whip well.
Gradually add the sugar, continuing to mix until the mixture becomes glossy and firm. Now, fold in the flour mixed with baking powder, the toasted walnuts, and the chopped Turkish delight. Use a spatula to carefully mix from the bottom up to avoid losing air from the mixture.
Pour the mixture into the prepared baking tray lined with baking paper. Bake in a preheated oven at 180°C for 30-35 minutes, or until the base is golden and easily pulls away from the edges. Let it cool in the tray.
2. Preparing the cream
While the base cools, we can prepare the cream. Place the egg yolks and sugar in a bowl and place it over a pot of gently boiling water (bain-marie). Stir constantly until the mixture becomes light in color and doubles in volume. Be careful that the bottom of the bowl does not touch the hot water.
When the cream is ready, add the vanilla extract and let it cool to room temperature.
In another bowl, whip the butter until creamy and airy. Once the egg yolk cream has cooled, gradually incorporate it into the butter, mixing continuously until well combined. If the cream curdles, don't panic! Add a splash of water and mix again over the bain-marie.
3. Assembling the cake
Once the base has cooled, you can begin assembling the cake. Spread half of the cream on the first wafer sheet, place the base on top, and then spread the remaining cream. Cover with the second wafer sheet.
To achieve a perfect texture, it is recommended to place something heavy on top of the cake and let it chill overnight. This will allow the layers to compact well and the flavors to blend.
4. Glazing the cake
The next day, prepare the glaze by melting the chocolate together with the cube of butter and a teaspoon of water. Stir until you achieve a smooth mixture. Pour the glaze over the assembled cake and let it cool.
