Preparing the cake
1. Preheat the oven
Start by preheating the oven to 180°C. It is essential to have the oven well heated to get perfectly baked layers.
2. Preparing the sponge
a. Separate the eggs: put the egg whites in a large bowl and the yolks in another bowl.
b. Beat the egg whites with a pinch of salt until frothy. Gradually add the sugar and continue beating until you achieve a stiff and glossy foam.
c. Incorporate the yolks one by one into the egg white mixture, gently mixing to avoid losing air.
d. Slowly pour in the oil, mixing continuously. Then add the baking powder, flour, and homogenize the mixture. You should obtain a soft, fluffy, and airy mixture.
3. Dividing the mixture
a. Divide the mixture into three bowls: in one, add a tablespoon of cocoa, while the other two remain white.
b. On a baking tray lined with parchment paper, pour the white mixture for the first layer. Bake for about 15 minutes or until golden.
4. Baking the layers
a. When the first layer is ready, remove it from the tray and let it cool. Bake the other two layers in the same way.
5. Preparing the syrup
In a small pot, put the water and sugar to boil, leaving it on low heat for 5 minutes until the sugar completely dissolves.
6. Butter cream
a. In another small pot, prepare a syrup from 3 tablespoons of sugar with 30 ml of water, boiling until the sugar melts.
b. Lightly beat the yolk, then pour the warm syrup around the edge of the bowl, continuously mixing until a foam forms. Let it cool slightly.
c. Add the butter cut into cubes, cocoa, and coffee, mixing well until you obtain a smooth and homogeneous cream.
7. Milk and cocoa cream
a. In a saucepan, combine the milk, flour, sugar, and vanilla seeds. Boil on low heat, stirring constantly until the mixture thickens.
b. Remove from heat and add the butter, cocoa, and coffee, mixing well.
8. Chocolate glaze
a. In a fondue pot or a small pot, heat the milk.
b. Add the broken chocolate pieces and stir until you obtain a homogeneous glaze. Let it cool for a few minutes.
9. Assembling the cake
a. Place the first white layer on a platter and gently soak it.
b. Spread some of the butter cream (keeping a tablespoon for decoration) and place the cocoa layer on top.
c. Add the second cream over the cocoa layer and place the second white layer on top.
d. Pour the chocolate glaze over the top and let the cake chill in the fridge for at least 30 minutes.
10. Decorating the cake
Whip the liquid cream with a mixer until you obtain a thick cream. Use it to decorate the cake, adding sprinkles or other sugar decorations for a festive look.
Useful tips:
- When separating the egg whites from the yolks, make sure no yolk gets into the whites; otherwise, they will not whip well.
- You can add a little almond extract to the butter cream for extra flavor.
- If you prefer less coffee, you can omit it or replace it with vanilla essence.
- This cake pairs wonderfully with freshly brewed coffee or aromatic tea, bringing a pleasant contrast between sweetness and bitterness.
Nutritional benefits:
This cake, rich in natural ingredients such as quality butter, eggs, and chocolate, offers a good source of energy and nutrients, but like any dessert, it should be consumed in moderation.
Frequently asked questions:
- Can I use another type of flour?
Yes, you can try whole wheat flour or almond flour for a healthier option.
- Can I replace the butter?
Yes, you can use margarine or coconut oil for a vegan option, but the taste will be different.
- What do I do if I don’t have cocoa?
You can substitute it with carob or simply omit it, obtaining a white cake that will be just as delicious.
I invite you to try this recipe and enjoy every bite! The "Sweet Universe" cake is not just a dessert, but an experience that will transport you into the world of flavors and sweet pleasures. Enjoy your meal!
