Artichoke is a special vegetable with a refined taste and delicate texture that deserves to be tried in savory dishes. We start by cleaning the artichoke, removing the outer leaves until we reach the most tender and light-colored ones. It is important to ensure that we cut the artichoke in halves or quarters, leaving part of the stem intact. This will add extra flavor and help maintain its shape during cooking. We use a special vegetable peeler that will help us easily remove the fibrous hair from the stem.

After we finish cleaning all the artichokes, we place them in a bowl with water and lemon juice. This step is essential because the citrus will prevent oxidation and darkening of the vegetables, keeping their vibrant color and appetizing appearance. We let the artichoke sit in the lemon water for about 10-15 minutes, then we take it out and drain it well.

The next step is to prepare a mixture of flour and cornmeal. This mixture will provide a crispy and tasty coating that will enhance the artichoke's flavor. In a bowl, we combine the flour with the cornmeal in a ratio of 2:1, adding a pinch of salt to intensify the taste. The resulting mixture should be uniform and free of lumps.

Now, we pass each piece of artichoke through this mixture, ensuring they are evenly coated. It is recommended to shake them gently to remove the excess flour. In a deep pan, we heat the oil over medium heat, being careful not to make it too hot to avoid burning the pieces. When the oil is hot, we add the artichokes, leaving enough space between them to fry evenly.

We fry the artichokes for about 4-5 minutes on each side until they become golden and crispy. It is important to turn them carefully so as not to destroy their shape. When they are ready, we take them out onto a plate covered with paper towels to absorb the excess oil.
