Welcome to the sweet and refined world of cakes! Today, I will guide you step by step in making a delicious New Year cake, perfect for celebrating the special moments in your life. This cake is not just an explosion of flavors but also a true work of art that will impress any guest. It features fluffy layers filled with delicate creams and glazed with fine chocolate. Let’s get started!
Necessary ingredients:
For the cake layers:
- 7 large eggs
- 7 tablespoons of oil (I recommend sunflower oil for a neutral taste)
- 1 tablespoon of cocoa (use quality cocoa for an intense flavor)
- 2 squares of grated chocolate
- 1 cup of sugar
- 1 cup of flour
- 1 teaspoon of baking powder (approximately 10g)
For the syrup:
- 200 ml water
- 1 essence of rum (for a flavorful taste)
- 1 tablespoon of sugar
For the white cream:
- 600 ml liquid cream (use cream with at least 35% fat content for perfect texture)
- 2 teaspoons of honey
- 1 packet of gelatin (approximately 10g)
- 2 tablespoons of milk
- vanilla essence (to taste)
For the dark cream:
- 200 g cooking chocolate (choose chocolate with at least 50% cocoa for a deeper taste)
- 1 cube of butter (approximately 25g)
- 250 ml liquid cream
For the glaze:
- 120 g cooking chocolate
- 1/2 cube of butter (approximately 12g)
- 2 tablespoons of milk
Decoration:
- Candied cherries (for an attractive look and a sweet-sour taste)
Step-by-step instructions:
1. Preparing the cake layers:
- Start by preheating the oven to 180°C. It is essential to have the oven well heated before placing the cake to ensure even baking.
- In a large bowl, beat the egg whites with a mixer until they triple in volume and become frothy. This is the moment to gradually add the sugar, continuing to mix until you achieve a glossy and firm meringue. A trick: to check if the meringue is ready, turn the bowl upside down; if it doesn’t move, you’ve succeeded!
- In another bowl, whisk the yolks with the oil until the mixture becomes a thin mayonnaise. Add this mixture to the egg whites, gently folding with a wooden spoon to avoid losing the air from the meringue.
- Finally, fold in the flour, cocoa, and baking powder, adding them gradually and mixing carefully.
- Line a round cake pan with parchment paper and pour the mixture into it. Bake for 35 minutes or until a tester inserted in the center comes out clean. Let the cake layer cool in the pan, then remove it onto a wire rack.
2. Preparing the syrup:
- In a small pot, combine the water, sugar, and rum essence. Let it boil for a few minutes until the sugar completely dissolves. This will add moisture and flavor to your layers.
3. Preparing the white cream:
- In a bowl, whip the liquid cream until it becomes firm. Add the honey and milk, gently mixing.
- Prepare the gelatin according to the instructions on the package (usually, it is hydrated in cold water and then dissolved in warm water) and incorporate it into the whipped cream mixture. Add the vanilla essence for extra flavor. Cover the bowl and refrigerate.
4. Preparing the dark cream:
- Using a double boiler, melt the cooking chocolate together with the liquid cream and butter, stirring constantly. When the chocolate has completely melted and the mixture is homogeneous, remove from heat and let it cool slightly.
5. Assembling the cake:
- Slice the cake into 3 evenly thick layers. Soak the first layer with the prepared syrup, then add some of the white cream and a thin strip of dark cream. Refrigerate for 15 minutes.
- Repeat the process for each layer, ensuring that the last layer is a cake layer. Cover the cake with the chocolate glaze, allowing it to drip slightly over the edges. Decorate with candied cherries for a festive appearance.
6. Serving:
- Cut the cake into slices and enjoy it with a cup of aromatic tea or coffee. It is a perfect dessert to be served at holiday meals or special occasions.
Tips and variations:
- You can add chopped nuts or almonds to the cake batter for a crunchy texture.
- Instead of candied cherries, try using fresh fruit slices or even grated chocolate for decoration.
- For a less sweet version, you can reduce the amount of sugar in the syrup and creams.
