Cream of Turnip Soup

Add a pinch of salt to enhance the flavors and let everything simmer over medium heat until the vegetables become soft and easy to mash with a fork.

Once the vegetables are cooked, strain the liquid, being careful to keep it, as it will be used later to adjust the consistency of the soup. Blend the cooked vegetables with a blender or food processor until you achieve a smooth cream. It is recommended to keep a few pieces of vegetables for garnish, which will provide a nice contrast when serving. Return the vegetable cream to low heat and add some of the strained liquid, stirring well to combine the ingredients.

In a separate pan, melt a bit of butter and add the flour. Sauté the flour in the hot butter, stirring constantly to avoid lumps. When the flour turns slightly golden, deglaze it with a bit of vegetable broth, stirring vigorously to obtain a smooth paste. This mixture will thicken the soup and give it a velvety texture. Gradually add this composition to the cream soup, stirring in a thin stream to prevent lumps from forming.

Let the soup come to a few boils, adjust the salt and pepper to taste, and if you want a more intense flavor, feel free to add additional spices like nutmeg or thyme. Finally, enrich the soup with the egg yolks mixed with sour cream. It is essential to dilute the yolk mixture with hot soup before adding it to the pot to prevent coagulation. Mix well and set aside.

Serve the soup while it is hot, either plain or with a spoonful of sour cream on top for extra creaminess. Sprinkle a bit of freshly ground pepper for a more intense flavor. This soup pairs perfectly with crispy bread croutons, which can be served separately to add an element of texture and flavor.
