Ingredients

For the cookie crust:
- 260 g cocoa cookies
- 180 g butter

For the cream cheese filling:
- 550 g cottage cheese
- 250 g Mascarpone cheese
- 100 g powdered sugar
- 200 ml Greek yogurt (10% fat)
- 200 ml heavy cream
- 20 g gelatin granules
- 1 teaspoon rum
- Vanilla (to taste)
- Chocolate shavings (optional)
- Nut cream rolls (for added texture)

For the chocolate mousse:
- 200 ml heavy cream
- 150 g milk chocolate
- 2 tablespoons cocoa powder
- 50 ml cognac (for a deeper flavor)

For decoration:
- White chocolate
- Milk chocolate
- Nut cream rolls

Preparing the Cheesecake

Step 1: Prepare the cookie crust
1. Start by melting the butter in a small saucepan over low heat. Make sure it doesn't boil!
2. Crush the cocoa cookies in a food processor or in a plastic bag using a rolling pin. Aim for a fine texture that holds together easily when squeezed.
3. Mix the crushed cookies with the melted butter until you achieve a homogeneous mixture.
4. Prepare a springform pan (preferably 26 cm in diameter) and line the bottom with parchment paper. Grease the sides of the pan with butter.
5. Evenly distribute the cookie mixture in the pan, pressing down firmly with a spoon or the bottom of a glass to form a solid crust. Place the pan in the refrigerator to set.

Step 2: Prepare the cream cheese filling
1. In a bowl, hydrate the gelatin in a little cold water according to the package instructions.
2. Whip the heavy cream until it becomes firm and set aside.
3. In another bowl, combine the cottage cheese, Mascarpone, powdered sugar, Greek yogurt, rum, and vanilla. Mix well until you achieve a smooth mixture.
4. Heat the hydrated gelatin in the microwave for a few seconds, being careful not to let it boil. Add it to the cheese mixture and mix well.
5. Gently fold the whipped cream into the cheese mixture, being careful not to deflate it.

Step 3: Assemble the cheesecake
1. Divide the cream cheese filling into three equal parts. Pour the first part over the cookie crust and return the pan to the refrigerator.
2. In the second part of the filling, add chocolate shavings and pieces of nut cream rolls, then pour this mixture into the pan to create a second layer.
3. For the chocolate mousse, bring the heavy cream to a boil, then add the chopped chocolate, cocoa powder, and cognac. Stir until smooth.
4. Once the mousse has cooled slightly, pour it over the third part of the cream cheese filling. Gently mix and pour this layer into the pan over the other layers.

Step 4: Cooling and decorating
1. Let the cheesecake chill in the refrigerator for at least 5 hours or, ideally, overnight to set well.
2. Once chilled, carefully remove the cheesecake from the pan, peeling off the parchment paper from the bottom.
3. Decorate with melted white and milk chocolate and nut cream rolls for an attractive look.

Serving Suggestions
This chocolate cheesecake pairs perfectly with a cup of freshly brewed coffee or a glass of sweet wine, which will complement the rich flavors even more. You can also serve it with a berry sauce for a fresh contrast.

Useful Tips
- For a lighter texture, you can replace part of the cottage cheese with Greek yogurt.
- If you prefer an alcohol-free cheesecake, you can omit the cognac from the chocolate mousse.
- Instead of cocoa cookies, you can use digestive biscuits or even butter cookies for a different flavor.

Nutritional Benefits
This cheesecake is rich in protein due to the cottage cheese and Greek yogurt, providing a good nutritional boost. Chocolate contains antioxidants, while the heavy cream adds a creamy taste, balancing the dessert's sweetness.

Frequently Asked Questions
- Can I use another type of cheese? Yes, you can experiment with goat cheese or ricotta, but the flavor will be different.
- How can I ensure the cheesecake doesn’t crack? Make sure not to open the oven door in the first 30 minutes of baking and allow the cheesecake to cool gradually.

This chocolate cheesecake is more than just a dessert; it’s a culinary experience that brings joy and satisfaction. Don’t let special occasions pass without making it. Each bite will be a true delight that will indulge your senses. Enjoy!
