Chicken Tochitura
To prepare a delicious recipe of chicken with giblets and tomato sauce, we start by ensuring that all the ingredients are ready. First, we wash, clean, and cut the chicken breast into cubes or strips. It is important to ensure that each piece is uniform, so it cooks evenly. Then, we mix the chicken breast with the vegetables to give it a pleasant flavor. We do the same with the chicken gizzards and hearts, which we will use in the recipe.
In a smaller pot, we boil the chicken giblets. We add salt and pepper to taste, to season them properly. In another pot, we pour in the oil and add finely chopped onion, diced red pepper, and if we want a spicy taste, the hot pepper. We sauté these ingredients together for a few minutes until the onion becomes translucent and fragrant. Then, we add the strips of chicken breast and sauté them until they change color.
Along the way, if necessary, we can add water to prevent the ingredients from burning. Once we notice it starts to boil, we add the finely chopped celery and let it cook until the chicken becomes tender and juicy. After everything is well cooked, we turn off the heat and cover the pot with a lid to retain the heat.
In the meantime, we check the chicken giblets. Once they are well boiled and soft, we add them to the pot with the chicken breast. It is important to keep the water in which the giblets were boiled, as we may need it later to adjust the consistency of the sauce.
Now we move on to preparing the sauce. If you prefer, you can use store-bought spaghetti sauce, but a freshly made sauce is always tastier. We wash the tomatoes, peel and seed them, then cut them into cubes. We put them in a small pot, add salt, pepper, finely chopped pepper, and chopped celery. We let it boil until the tomatoes soften and release their juice. Once the mixture is well cooked, we add basil, oregano, and minced garlic.
We turn off the heat and pour the sauce over the meat, mixing well to combine the flavors. We turn the stove back on, heating everything for about 10 minutes. If needed, we can add a little water from the one in which the giblets were boiled to achieve a more liquid consistency.
Finally, we add the minced garlic and fresh parsley. We mix well and cover with a lid to allow the flavors to meld. We serve the dish alongside a steaming portion of polenta and pickles, or, for a more comforting option, with mashed potatoes or duchess potatoes. This combination will turn the meal into a true feast of flavors!
Ingredients: 2 pieces of chicken breast, 4 chicken gizzards, 4 chicken hearts, 2 large onions, salt and pepper to taste, 2-3 bell peppers, hot pepper to taste (optional), 6-7 tablespoons of olive oil, 1 bunch of fresh parsley, 1 tablespoon of homemade vegetable seasoning, 1/2 stalk of celery, 3-4 cloves of garlic. For the sauce: 5-6 tomatoes, 1/2 stalk of celery, 1 teaspoon of basil (I used my dried one because it's pouring outside and I couldn't get into the garden), 1/2 finely chopped bell pepper, 4-5 cloves of garlic, oregano powder, salt and pepper to taste.
