Walnut and Cocoa Cake
To prepare a delicious chocolate and walnut cake, we will start by gathering all the necessary ingredients and preparing the utensils. Make sure you have margarine, sugar, vanilla sugar, rum essence, cocoa, walnuts, eggs, and flour on hand. It is essential to use a suitably sized pan, preferably with high edges, and to have baking paper to prevent the cake from sticking.
The first step is to mix the soft margarine with the 200 g of sugar and the vanilla sugar. Use a mixer or a spatula to achieve a smooth and creamy mixture. Add the rum essence for an extra flavor that will give the cake a distinctive taste. Once the margarine and sugar are well integrated, you can add the 3 tablespoons of cocoa, mixing continuously. Next, add the chopped walnut kernels, which will bring a crunchy texture and a delicious taste.
Carefully separate the eggs, placing the egg whites in a clean bowl and the yolks in another bowl. Beat the egg whites with a mixer until you obtain a firm foam. This will help aerate the cake, making it fluffier. After you have obtained the foam, gently incorporate it into the margarine mixture, stirring lightly so as not to deflate the air from the egg whites. Then, gradually add the flour, mixing until well combined.
Prepare the pan by lining it with baking paper, then pour the batter evenly into the pan. It is important that the batter is spread in a thin layer, about two fingers thick, so that the cake bakes evenly. Preheat the oven to 200 degrees Celsius and place the pan inside. Allow the cake to bake for 15 minutes, until a golden crust forms on top.
While the cake is baking, you can prepare the glaze. Beat the egg yolks with the remaining 100 g of sugar until the mixture becomes frothy and light in color. When the cake has set and has formed a crust, remove the pan from the oven and pour the yolk glaze evenly over its surface. Put the cake back in the oven and let it bake for another 10-15 minutes. Check if it is done by doing the toothpick test: if it comes out clean, the cake is perfectly baked.
After the cake has baked, let it cool in the pan for a few minutes, then you can transfer it to a rack. Cut it into squares and serve it alongside a cup of coffee or tea. This chocolate and walnut cake will surely become a favorite among your family and friends!
