To create a delicious and aromatic cake, we start by preparing the coffee. In a pot, we add 250 ml of water and bring it to a boil. Once the water starts boiling, we add the 4 tablespoons of ground coffee, stirring well to ensure it infuses perfectly. After the mixture has boiled for a few minutes, we can add 2 tablespoons of sugar, which will sweeten the coffee and enhance the flavors. Once the coffee is ready, we let it cool completely so it doesn't affect the final texture of the cake.

In a large bowl, we start preparing the cake base. We add the remaining sugar and oil, mixing them well until we obtain a homogeneous composition. This will add moisture and make the cake fluffier. Once the mixture is uniform, we begin to gradually add the cooled coffee, continuing to mix until fully incorporated.

The next step is to bring the dry ingredients into the mix. In another bowl, we activate the baking soda with a little lemon juice – this step will activate the baking soda and help the cake rise well. We add the activated baking soda to the mixture and continue to mix. Then, it's time to add the flour, which will give structure to the cake. We mix well to avoid lumps, then add our favorite jam, which will bring a touch of flavor, followed by cocoa, which will intensify the coffee flavors.

To complete the mix, we add a pinch of cinnamon, which will provide a warm and comforting note. The last ingredient we add is the remaining coffee, ensuring everything is well combined. The resulting mixture should be dense but homogeneous.

We prepare the baking pan using a 38x26 cm tray, which we line with parchment paper. We carefully pour the mixture into the tray, smoothing it out with a spatula to achieve an even cake. We preheat the oven to a moderate heat, and when it's ready, we place the tray inside. We let the cake bake until it passes the toothpick test – a toothpick inserted in the middle should come out clean.

Once the cake is baked, we let it cool in the tray, then we can cut it into portions and serve it, enjoying the intense aroma of coffee and the sweetness of the ingredients. This cake is perfect for a snack or to be enjoyed alongside a cup of coffee!

 Ingredients: 1 cup of sugar, 1 cup of oil, 3 cups of flour, 1 cup of coffee (the coffee is made from 250 ml of water + 4 tablespoons of ground coffee + 2 tablespoons of sugar), 1 teaspoon of baking soda, 1 tablespoon of lemon juice, 5 full tablespoons of plum jam (the jam can be used according to everyone's preference), 3 tablespoons of cocoa, 1 tablespoon of cinnamon, 1 tablespoon of ground coffee, powdered sugar for decoration. *The cup used for measuring the ingredients is 250 ml.
