Total time: 1 hour
Number of servings: 12
Ingredients
For the base:
- 5 eggs
- 100 g sugar (for yolks)
- 1 packet of vanilla sugar
- Zest of 1 lemon
- 6 tablespoons flour
- 1 teaspoon baking powder
- 5 packets of sugar (for egg whites)
For the cream:
- 3 packets of gelatin
- 9-10 ripe bananas
- 5 tablespoons sugar
- 1 liter vegetable cream
- 150-200 g grated chocolate
For the syrup:
- 300 ml water
- 4 tablespoons sugar
- 3 teaspoons orange zest
For decoration:
- 150 g melted chocolate
Preparation
Step 1: Preparing the base
Start by preheating the oven to 180°C. In a large bowl, whisk the yolks with the sugar, vanilla sugar, and lemon zest until they become a light and fluffy cream. In another bowl, beat the egg whites with the 5 packets of sugar until you get a stiff and shiny foam.
Step 2: Combining the ingredients
Gently fold the yolks into the egg white foam using a spatula to keep the air in the mixture. Sift the flour together with the baking powder and gradually add them to the mixture, stirring gently until the ingredients are well incorporated.
Step 3: Baking the base
Line a round baking pan with parchment paper and pour the mixture inside. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and let it cool completely before cutting it in half.
Step 4: Preparing the cream
Meanwhile, prepare the cream. Soak the gelatin in cold water according to the instructions on the package. Mash 9-10 bananas with a fork until you get a puree and mix it with the sugar. In another bowl, whip the vegetable cream until it becomes firm, then add the banana puree and grated chocolate. Melt the gelatin over low heat until it becomes liquid, then incorporate it into the banana cream, mixing well.
Step 5: Assembling the cake
Once the base has cooled, cut it in half. Place one half of the base on a platter and soak it with the syrup made from water, sugar, and orange zest. You can make the syrup by boiling the ingredients for 5-10 minutes and then cooling it. Place the remaining bananas on top, followed by the melted chocolate and half of the banana cream. Cover with the other half of the base, soak again, and frost the cake with the remaining cream.
Step 6: Decorating
For an attractive look, decorate the cake with melted chocolate. A unique suggestion would be to sprinkle some pieces of roasted nuts or hazelnuts for an extra texture and flavor.
Helpful tips:
- Make sure the bananas used for the cream are very ripe; the riper they are, the more intense the flavor will be.
- You can experiment with the chocolate used; choose dark chocolate for a more bitter note or white chocolate for a sweeter dessert.
- The cake can be kept in the fridge for a few days, but it is best consumed within the first 24 hours to maintain its freshness.
I hope you enjoy this banana and chocolate cake recipe! It is a dessert that will surely impress everyone, whether you are celebrating a special occasion or simply want to treat yourself. Bon appétit!
