Clarified Butter - Ghee
Ingredients: natural unsalted butter (without food additives) or organic butter with at least 80% fat
To prepare ghee, a versatile and flavorful ingredient, start by gathering all the necessary ingredients and utensils. Also, make sure you have an enameled pot with an intact layer, a wooden spatula, and a clean cheesecloth, folded in multiple layers to filter the ghee.
Begin by placing the butter in the enameled pot, being careful not to fill it completely, as it will foam during the clarifying process. Place the pot over low heat and let it melt slowly. It is essential to maintain a low temperature to allow the oils to separate from the water and milk proteins without burning. Boil the butter for 10-15 minutes, stirring gently from time to time to prevent sticking to the bottom of the pot. As the butter melts, you will notice a white foam forming on the surface; this is made up of proteins and other impurities that need to be removed.
When the butter becomes clear and takes on a golden hue, it is time to turn off the heat. Let it rest for about 2 minutes so that the heavier particles settle to the bottom of the pot. Then, take the cheesecloth and place it over a clean, dry jar. Using the spatula, carefully pour the clear liquid from the top, being careful not to include the solid particles from below. After pouring all the ghee into the jar, close it tightly with a lid. It is important to keep the ghee in a dust-free place, but without worrying about temperature or brightness. Unlike regular butter, ghee has a longer shelf life and can be stored at room temperature without spoiling.
