To prepare a delight that will add extra flavor to your salads, we start by boiling a generous amount of water in a medium pot. It is essential that the water is sufficient to allow the flavors to fully develop. When the water begins to boil vigorously, we add the vinegar, which will bring a touch of acidity, perfectly balancing the flavors. At this point, it's time to introduce the crushed garlic cloves – make sure you have cleaned them well beforehand. The garlic will provide an intense and invigorating taste, and its aroma will infuse into the boiling liquid.

Next, we take care of the spices. Sprinkle some fresh or dried thyme leaves – this will add a floral note and a deep aroma. We continue with tarragon, which will impart a slight aniseed flavor, perfect for salads. Don't forget the whole pepper; adding this will further intensify the flavors, and sugar or honey (depending on your preferences) will add a sweet contrast, balancing the acidity of the vinegar. I chose sugar, but the choice is yours. The bay leaf is the final ingredient, providing a subtle yet essential fragrance that will transform the liquid into an unforgettable marinade.

We let all these ingredients simmer on low heat for 5 minutes, enough time for the flavors to blend and become one. After boiling, it’s time to let the mixture cool to room temperature. This is an important step; a marinade that is too hot can affect the vegetables when you add them. Once the mixture has cooled, we strain it to remove all solids and obtain a clear liquid.

Now, carefully pour this aromatic liquid into a clean bottle. Make sure you have a well-sealed bottle so that you can store the marinade in the refrigerator for later use. This versatile dressing can be used not only for salads but also to marinate grilled vegetables or even to give a special flavor to meat dishes.  Ingredients: 250 ml vinegar, 750 ml water, 4 cloves of garlic, 1 teaspoon thyme (or a sprig if you have it), 1 bay leaf, 1 teaspoon whole pepper, 1 teaspoon coriander (optional, I didn't add it), 1 tablespoon tarragon, 1 tablespoon honey or sugar.
