In a large bowl, beat the eggs with the sugar until a fluffy and light-colored mixture is obtained. Gradually add the milk and oil, continuously mixing to integrate the ingredients well. In another bowl, combine the flour with the baking powder, salt, and grated coconut. Incorporate the dry ingredients into the wet mixture, mixing with a spatula until there are no lumps. It is important not to mix too much to maintain the fluffy texture of the loaf.

Pour the batter into the prepared pan and bake for about 40-45 minutes, or until a toothpick inserted in the center of the loaf comes out clean. Once the loaf is baked, let it cool in the pan for 10 minutes, then remove it and let it cool completely on a wire rack.
