Wild Duck in the Oven
Duck is a delicious and refined dish, perfect for special occasions or festive meals. We start by carefully seasoning the duck on the outside, using salt, pepper, and sweet paprika to give it a rich and flavorful taste. Don't forget to pay the same attention to the inside to ensure an even aroma. Once seasoned, we wrap it well in aluminum foil to keep it juicy and let it chill, ideally overnight, but for at least 12 hours. This will allow the spices to penetrate deep into the meat, enhancing the flavors.
The next day, preparing the vegetables is essential. We slice the onion into rings or julienne, depending on preferences, and after blanching them, we cut the tomatoes into thin slices. The bell pepper should be finely sliced to integrate perfectly into the dish. The duck, taken out of the foil, is filled with sauerkraut, which adds a note of acidity and a crunchy texture, interspersed with pieces of smoked bacon for extra flavor. Filling the duck is a crucial moment, and sewing up the belly is an important step that will keep all the juices inside.
After the duck is filled and sewn, we take care of the vegetable mix. In a special cooking bag, we place the Mexican vegetable mix, onion, bell pepper, tomatoes, and bacon. This mix will add a contrast of textures and flavors, being the perfect complement to our duck. We place the duck on top of this mix and drizzle everything with 200 ml of meat broth, which will help maintain the juiciness of the dish. In the absence of homemade broths, dissolved broth cubes in water are a quick and convenient alternative.
We tie the bag well, making sure to prick it in a few places with a needle to allow steam to escape, and place everything in a tray. The oven should be preheated, and the duck will be cooked for about 2 hours. This slow cooking process will turn every bite into an unforgettable culinary experience, with the meat becoming extremely tender and flavorful.
Once the duck is ready, we serve it with boiled rice, which will absorb the delicious juices, and the vegetables from the magic bag, which bring a note of freshness and color. This dish is not only tasty but also visually appealing, bringing joy to your table. Enjoy your meal!
