Ingredients:
- 600 g salmon fillet (preferably fresh, but can also be frozen)
- 4 tablespoons extra virgin olive oil
- 2 medium onions, julienned
- 2 carrots, peeled and cut into sticks
- 1 red bell pepper, sliced
- 3 cloves of garlic, minced
- 200 ml fish stock or water
- 2 tablespoons lemon juice
- Salt and pepper, to taste
- A bunch of fresh parsley for garnish
Preparation of salmon plachie:
1. Start by preparing the ingredients. Make sure the salmon fillets are at room temperature for even cooking. If using frozen salmon, it is recommended to thaw it in the refrigerator a day before. Cut the fillets into smaller portions, each weighing about 150 g.
2. In a large skillet, add the olive oil and heat it over medium heat. The olive oil not only adds flavor but also helps achieve a slightly crispy crust on the salmon.
3. Add the salmon fillets to the skillet, allowing them to brown for 1-2 minutes on each side. It is important not to overcook them to maintain the fish's juiciness. Once browned, remove them to a plate and set aside.
4. In the same skillet, add the onion, carrots, and bell pepper. Sauté the vegetables for 5-7 minutes until they become slightly soft. This mixture will add a sweet and aromatic taste to your plachie.
5. Add the minced garlic and cook for another minute, ensuring it doesn’t burn, as garlic becomes bitter if overcooked.
6. Pour the fish stock or water over the vegetables, add the lemon juice, salt, and pepper to taste. Stir well to combine the flavors.
7. Carefully place the salmon fillets back into the skillet, covering them with the vegetables and sauce. Cover the skillet with a lid and let it simmer on low heat for 10-15 minutes. This step will allow the salmon to cook slowly, keeping its juiciness.
8. After the salmon is cooked, remove the lid and let some of the liquid evaporate if necessary. Before serving, garnish the dish with chopped fresh parsley.
Serving:
The salmon plachie can be served with a side of basmati rice or mashed potatoes, which will absorb the delicious flavors of the sauce. Additionally, a drizzle of lemon juice on top will enhance the taste.
Variations:
For a slightly spicy note, you can add chili flakes or a chili sauce. If you prefer a vegetarian dish, you can replace the salmon with tofu fillets and the fish stock with vegetable stock.
This salmon plachie is a quick and delicious recipe, perfect for any occasion. Enjoy the flavors and savor every bite!
