- Zest of 1 orange
- A pinch of salt

- Baking tray (24x28 cm)
- Silicone spatula
- Sifter for flour
Instructions
1. Preparing the ingredients
Start by preparing all the ingredients. Make sure the butter is at room temperature to melt evenly. If you have time, take it out of the fridge about an hour before starting the recipe. Also, separate the eggs and let them reach room temperature.
2. Melting the butter
In a small saucepan, melt the butter over low heat, being careful not to burn it. Once melted, let it cool slightly, but not completely.
3. Preparing the egg mixture
In a large bowl, add the egg yolks and mix them with the granulated sugar (300 g) and the 2 tablespoons of water. Continue mixing until the mixture becomes light in color and fluffy. This step is essential to incorporate the air needed for the cake.
4. Incorporating the butter
Add the melted butter and mix well until everything is homogeneous. You can now add the lemon essence, lime juice and zest, as well as the lemon and orange zest. The citrus flavors will add a fresh note to your cake.
5. Adding the flour
Sift the flour over the egg mixture, mixing at low speed to avoid lumps. This step is crucial because sifted flour adds air and creates a fine texture.
6. Incorporating the milk
Gradually add the warm milk, stirring constantly. The mixture should become liquid, but don't worry, it will turn into something wonderful in the oven!
7. Beating the egg whites
In another bowl, beat the egg whites with a pinch of salt and a little lemon juice until they form stiff peaks. This step will help create that airy and light layer of the cake. Fold the egg whites into the previous mixture using a spatula to avoid losing air from the whites.
8. Preparing the tray
Line the tray with parchment paper or grease it with butter and sprinkle a little flour. It is important that the cake does not stick to the tray, so do not skip this step!
9. Baking
Pour the mixture into the tray and place it in the preheated oven at 160°C. Bake the cake for 60-75 minutes, until it is nicely browned on top. It is normal for the cake to rise, and during baking, the layers will separate and form beautifully.
10. Cooling
Once the cake is baked, let it cool in the oven with the door ajar for about 30 minutes. This will help prevent cracks on the surface. Then, take it out of the oven and let it cool completely.
Serving
The smart cake is delicious both warm and cold, but we recommend letting it chill in the fridge overnight. The taste is truly special the next day when the flavors have intensified. You can serve it plain or with a berry sauce, a dollop of cream, or a scoop of vanilla ice cream for a delightful contrast.
Variations and tips
- Add raisins: If you like raisins, you can add them to the mixture before pouring it into the tray. They will add a pleasant sweetness and an interesting texture.
- Various flavors: Instead of lemon essence, you can use orange or almond essence to change the flavor profile.
- Decorations: You can sprinkle powdered sugar on top for an elegant look or add slices of fresh fruit to enrich the presentation.
