Preparation time: 15 minutes
Cooking time: 30 minutes
Total time: 45 minutes
Servings: 4-6
Ingredients:
- 1 kg mixed mushrooms (e.g., chanterelles and champignons)
- 1 red onion
- 1 white onion
- a few cloves of garlic
- 1 bunch of fresh parsley
- 1 bunch of fresh dill
- 1 teaspoon sweet paprika
- 1 teaspoon curry
- salt, to taste
- oil for sautéing (preferably olive oil)
Preparation of the dish:
1. Preparing the mushrooms: Start by washing the mushrooms thoroughly. It’s important not to peel them, as the skin contains many nutrients. Slice the champignon mushrooms thinly, and for the other mushrooms, leave the caps whole and chop the stems finely. This combination will add varied texture to your dish.
2. Sautéing the vegetables: In a large pan, add a few tablespoons of olive oil and heat it over medium heat. Crush a few cloves of garlic and add them to the hot oil, letting them release their aroma for 1-2 minutes. Then, add the julienned red and white onions. Sauté them for 3-4 minutes or until the onions become translucent and change color.
3. Adding the mushrooms: Start adding the sliced champignon mushrooms, stirring constantly to help them release their juices. After a few minutes, gradually add the remaining mushrooms, letting them stew and combine their flavors. It’s essential to stir well and ensure all mushrooms cook evenly.
4. Seasoning: When the mushrooms start to boil and reduce their liquid, add the sweet paprika, curry, and a little salt, adjusting the taste as desired. Finally, add the chopped greens (parsley and dill) and let it cook for another 2-3 minutes for the flavors to meld perfectly.
5. Finishing: Once the mushrooms are cooked and the liquid has reduced sufficiently, you can turn off the heat. Cover the pan with a lid and let the dish rest for a few minutes so the flavors can intensify.
Serving: The mixed mushroom dish can be served warm or cold. It’s delicious alongside polenta but can also be enjoyed with a garlic sauce or freshly grated horseradish. If you want a version with a splash of alcohol, you can add a glass of dry white wine during cooking, which will enhance the mushroom flavors.
Customized version: If you want to experiment, you can also add other types of mushrooms, such as porcini or shiitake, which will bring a unique touch to the dish. Additionally, for a stronger flavor, you can try adding a few drops of soy sauce or even lemon juice before serving.
Nutritional benefits: Mushrooms are rich in vitamins, minerals, and antioxidants. They are low in calories but high in fiber, making them ideal for a healthy diet. They are an excellent source of vitamin D, which contributes to bone health, as well as B vitamins, essential for metabolism.
