Pasta Salad with Chicken

 Ingredients: - 300 g of colored pasta; - 1 medium chicken breast; - 1 small can of sweet corn; - mayonnaise to your liking; - salt; - pepper. For the mayonnaise: - 3 eggs (2 hard-boiled yolks and 1 raw egg with the white); - 1 teaspoon of mustard; lemon juice and oil to taste.

Like every passionate cook, I enjoy experimenting with various ingredient combinations, and my recipes reflect this creative spirit. In this recipe, I will combine meat, pasta, and a mayonnaise sauce, resulting in a delicious salad, perfect for family meals or a quick lunch. These dishes are not only tasty but also bring moments of conviviality, where everyone can contribute with impressions and suggestions.

We start by boiling the meat, whether it is chicken, pork, or beef, and make sure to remove the foam that forms on the surface, to obtain a clear and tasty broth. We simmer on low heat, being patient until the meat is well cooked. When ready, we remove the meat from the broth and let it cool. Once cooled, we cut it into suitable cubes that will easily integrate into the salad.

Meanwhile, we take care of the pasta. We boil it according to the instructions on the package, being careful not to leave it too long so that it remains al dente. Properly cooked pasta adds a pleasant texture and a subtle taste to our dish.

For the mayonnaise, I prefer the homemade version, which is much tastier and healthier. I prepare the mayonnaise from 3 eggs: 2 hard-boiled yolks and 1 raw egg, including the white. I add a teaspoon of mustard, the juice of one lemon, and the oil, which I incorporate gradually until I achieve a firm and creamy paste. This mayonnaise is ideal for those who want a lighter dressing; for an even lighter version, part of the mayonnaise can be replaced with natural yogurt, without flavors.

Once all the ingredients are ready, in a large bowl, we combine the meat cubes, the boiled pasta, and, if desired, drained corn kernels. We gently mix, being careful not to crush the pasta, and add the mayonnaise sauce to taste. This recipe is quick to prepare, with minimal effort and investment, making it perfect for busy days.

In the end, do not forget to serve the salad with a sprinkle of fresh herbs, such as parsley or dill, for an extra flavor and a more pleasant appearance.
