Lamb Curry, Jamaican Style

To prepare an authentic Jamaican goat curry, you will need the following ingredients: 1 kg of goat or kid meat, cut into cubes, 2 large onions, finely chopped, 4 cloves of garlic, crushed, 1 piece of fresh ginger, grated, 2 hot peppers, finely chopped, 2 tablespoons of Jamaican curry, 1 teaspoon of turmeric, salt and pepper to taste, 2-3 tablespoons of coconut oil, 1 cup of water or meat broth, and a few bay leaves.
Preparing this dish starts by marinating the meat. In a large bowl, combine the goat meat cubes with the onion, garlic, ginger, hot pepper, Jamaican curry, turmeric, salt, and pepper. Let the mixture marinate for at least 1 hour, but ideally, leave it overnight in the refrigerator to allow the flavors to penetrate the meat well.
After marinating the meat, heat the coconut oil in a large pan over medium heat. Add the marinated meat and brown it well on all sides for about 5-7 minutes, until golden. Then add the water or meat broth and the bay leaves, covering the pan with a lid. Let it simmer on low heat for about 1-1.5 hours, or until the meat becomes tender and juicy.
During cooking, you can adjust the spices to taste. If you like your food spicier, you can add more hot pepper or even a splash of hot sauce. Serve this goat curry with a side of white rice or coconut rice, and for an even more intense flavor, you can add a fresh vegetable salad.
