 Ingredients: 500 ml hot milk, left to cool 1 and a half tablespoons brown sugar 2 teaspoons salt 4 teaspoons dry yeast 250 g graham flour 250-300 g white flour

We start by preparing the necessary ingredients to make a delicious and healthy bread that can become the star of your meal. In the mixing bowl, we add the sugar and pour the warm milk over it. It is important to keep a small portion of milk to soften the dry yeast, which is essential for obtaining a fluffy starter. Once the yeast has softened well in the milk, we add it to the mixing bowl and turn on the machine at speed 1, the lowest setting, to combine the ingredients.

At this point, we will begin to add the two types of flour, one tablespoon at a time, while the mixer is running. This will yield a soft dough with a consistency similar to that of pancakes, but denser. Once we reach this consistency, I increase the speed of the mixer to activate the gluten, a crucial step. We mix vigorously for about 3 minutes, then stop the mixer. It is time to let the dough rise, covering the bowl with a clean towel. This is the beginning of our starter.

After 10 minutes, you will notice how the starter has risen beautifully, a sign that the yeast is doing its job. We turn the mixer back on at the first speed and gradually add the rest of the flour, which we previously mixed with salt. It is essential to incorporate the salt at this stage to achieve a balanced flavor. The dough will slowly form, becoming softer and slightly sticky, but firm enough to be worked.

Once we have obtained the desired dough, we take it out of the mixing bowl and knead it by hand for one minute to give it a uniform texture. Then, using a rolling pin, we roll out an oval sheet, about one finger thick. We roll the sheet obtained and place the roll in the bread pan, which we previously greased with olive oil to prevent sticking.

Now, it is time to let the dough rise again for about 45 minutes, during which it will grow and fill with air. We preheat the oven to a high temperature of 220°C (425°F). We place the bread in the oven and bake for the first 10 minutes at this high temperature, then reduce the temperature to 180°C (350°F) and continue baking until the bread is golden brown and crispy.

To give it an appetizing appearance, we brush the surface with a little oil before putting it in the oven. When the bread is ready, we take it out and lightly moisten it with cold water to keep the crust soft and moist. This healthy bread will stay fresh for up to four days, but considering its delicious taste, it might not last that long in your home. For me, it was gone in just a day and a half!
