Pea Food
In a medium-sized pot, I started by adding a generous amount of oil, which will serve as the base for the flavors to come. I chose to use dried dill, but for an extra touch of freshness, I also added finely chopped fresh parsley. These herbs will give the dish an unmistakable flavor. After letting the mixture heat for a few seconds, I added the peas, which I gently stirred with a wooden spoon, ensuring that each pea was evenly coated with oil, releasing its flavors.
Once the peas began to change color slightly, I sprinkled in the flour, stirring again to prevent lumps from forming. The flour will help thicken the mixture, giving it a creamy and consistent appearance. Immediately after, I added the sugar, which will bring a touch of sweetness and pleasantly contrast with the salty taste of the ingredients. Then, I poured in about 75 ml of milk, stirring constantly to achieve a smooth texture.
As I noticed that the mixture was starting to thicken too much due to the flour, I decided to add a little more milk, being careful not to exceed a total of 100 ml. The boiling time varies depending on the type of peas used. If you choose canned peas, boiling will only take about 10 minutes, enough for the flour to combine with the milk and for the peas to drain well before serving. If you use frozen peas, you will need to boil them for about 30 minutes to ensure they are properly cooked.
This delicious dish can be served both warm and cold, making it a perfect side for a juicy steak or crispy schnitzels. It also pairs wonderfully with fried potatoes or potato croquettes, offering a contrast of textures and flavors. Adjust the amount of dill and parsley according to your preferences to achieve a personalized taste. This simple yet flavorful recipe is sure to become a staple in your kitchen!
