Dukan Muffins
After preparing a tray of oven-baked chicken for the whole family, I realized I had nothing quick and sweet for myself. I made these Dukan muffins while the kitchen was still warm, and I ended up with exactly three, just enough for me to taste and share a little with my daughter. I didn't complicate the recipe at all; one bowl for the dry ingredients and a few minutes of mixing were enough. I love that I don't have to spend much time around them, and I can eat them cold or with yogurt if I feel like something quick.

Dukan diet recipe, suitable as a quick snack
Ingredients
1 egg
2 tablespoons oat bran
1 tablespoon wheat bran
1 tablespoon powdered sweetener (like Clio)
1 teaspoon cocoa
half a teaspoon baking powder
rum essence, to taste
a pinch of salt
2 tablespoons cold water
Preparation method
1. In a bowl, mix all the dry ingredients: oat bran, wheat bran, sweetener, cocoa, baking powder, and salt. Mix well to avoid lumps, especially with the cocoa.
2. In another bowl, beat the egg with a pinch of salt until combined. Add the rum essence and the two tablespoons of cold water.
3. Add the dry mixture to the egg, mixing everything with a spatula or spoon until a homogeneous, fairly soft batter is obtained.
4. Divide the mixture into 3 muffin molds. I use silicone molds because they come out easily after baking.
5. Place the tray in the preheated oven at medium heat. Bake for 20 minutes. They don't rise much but firm up slightly on the surface.
6. After removing them from the oven, let them cool for a few minutes. They can be served cold or at room temperature.
Why I make the recipe often
I like that I usually have the ingredients on hand, and I don't waste much time. The muffins are filling but light, and if I want something quick for breakfast or a snack, they are just right. The recipe also works if I have guests who are on a diet or if I need something I can eat without straying from my plan.
Tips and variations
Tips
If you don't use silicone molds, I recommend greasing the molds with a little oil or using special paper to prevent sticking.
Let the muffins cool well before removing them from the mold; they will come off more easily and won't crumble.
Don't try to double the recipe without adjusting the baking time – if you make more at once, they might need a few extra minutes.
Substitutions
If you don't have rum essence, you can omit it or use a little vanilla, but the rum gives a familiar taste of classic Dukan dessert.
Baking powder doesn't really have an alternative here; it helps the muffins not to be too dense.
Cocoa can be omitted if you want a neutral version, but it slightly reduces the dessert flavor.
Variations
You can add a few drops of orange essence or a little cinnamon for a different flavor.
If you use a different type of sweetener, make sure it's suitable for baking and adjust the amount according to how sweet it is.
I do not recommend adding fruits or other sugar-containing additives if you are on a strict diet, but for more relaxed phases, you could try adding a little lemon zest.
Serving ideas
I like to eat them with a glass of cold yogurt, especially for breakfast.
They are also good as an afternoon snack, straight from the fridge.
They can be packed as well; they don't crumble easily if they are completely cold.
Frequently asked questions
1. What type of sweetener do you use?
I usually use Clio or any powdered sweetener that withstands baking temperatures. It's important to check that it doesn't leave a bitter taste and is suitable for baking.
2. Can they be made without cocoa?
Yes, they can be made without cocoa, but they will have a simpler, almost neutral taste. Cocoa adds an extra flavor, but it is not essential.
3. What do I do if I don't have wheat bran?
If you don't have it, you can use only oat bran, but the texture will be a bit fluffier, not as dense. If you want to stick to the Dukan diet, it's better to include wheat.
4. Can they be frozen?
I don't recommend it; the texture doesn't hold up well after freezing. It's best consumed the same day.
5. Can I use a mixer or food processor?
No need; the batter mixes very easily with a spoon or spatula, so it's not worth dirtying other dishes.
Nutritional values
The values are estimates for the entire composition (3 muffins):
Total energy: approx. 120-130 kcal
Protein: 7-8g
Carbohydrates: 10-12g (from bran and sweetener, if it doesn't contain sugar)
Fats: 3-4g (from egg)
Fiber: 4-5g
Calories may vary depending on the type of sweetener and the size of the egg. The muffins are suitable for the Dukan diet as they do not contain flour, sugar, or added fat.
Storage and reheating
They are best consumed on the day they are made. If there are leftovers, they can be stored in the fridge for 1-2 days in a sealed container. The texture becomes a little more moist after cooling, but the taste does not change. They should not be reheated in the oven or microwave, as they may become hard. If you want to take them with you, make sure they have completely cooled down before packing.
