To prepare a delicious recipe for an omelette with peppers, tomatoes, and cheese, we start by ensuring we have all the ingredients at hand. You will need bell peppers, ripe red tomatoes, fresh garlic, eggs, cheese (preferably feta or telemea), natural yogurt, salt, pepper, and a little olive oil. These simple yet flavorful ingredients will come together to create a dish that will delight your taste buds.

Start by cutting the peppers into strips or cubes, depending on your preference. Heat a large skillet, add olive oil, and let it heat up well. Put the peppers in the skillet and sauté them over medium heat, stirring occasionally, until they become soft and slightly caramelized, about 5-7 minutes. Then, add the diced tomatoes and crushed garlic, continuing to cook the mixture over low heat. Let it simmer until the tomatoes break down and their juice combines with the flavors of the peppers, creating a rich and savory composition. This process will take about 10-15 minutes.

Meanwhile, in a separate bowl, whisk the eggs with a whisk, adding a pinch of salt and pepper for extra flavor. Make sure the eggs are well beaten so they become fluffy.
