Clafoutis is a delicious and comforting French dessert that perfectly combines the fluffy texture of the batter with the flavor of fresh fruits. Although it is believed that this traditional recipe must include pitted cherries, there are also equally tasty variations, such as flognarde, which can be made with other fruits or even vegetables.
To start making a clafoutis or a flognarde, you will need the following ingredients: 4 medium-sized eggs, 100 g of granulated sugar, 30 g of unsalted butter, melted, 100 g of flour, 500 ml of milk, one teaspoon of vanilla extract, and a pinch of salt. If you choose to use apricots, make sure they are ripe and sliced thinly to integrate perfectly into the batter.
The first step is to preheat the oven to 180 degrees Celsius, so it is ready to receive your delight. In a large bowl, beat the eggs with the sugar until the mixture becomes frothy and pale. This is an important moment, as the air incorporated into the eggs will ensure a fluffy texture for your clafoutis. Then, add the melted butter and mix well to incorporate it.
The next step is to add the flour, mixing with a whisk to avoid lumps. When the flour is fully integrated, gradually add the milk, continuing to stir. Finally, add the vanilla extract and a pinch of salt, which will enhance the flavors and balance the sweetness of the dessert.
If you want to follow the traditional version, you can place the cherries in the baking dish before pouring in the batter, but if you want to use apricots, you can add them directly into the batter. The latter is a quicker option and does not affect the final taste. Pour the obtained mixture into a buttered baking dish, ensuring that the fruits are evenly distributed.
After pouring in the batter, place the dish in the preheated oven and let it bake for about 40 minutes, or until the clafoutis is golden and firm to the touch. You can check if it is done by inserting a toothpick in the center; if it comes out clean, the dessert is perfect.
Once out of the oven, let it cool slightly, then dust it with powdered sugar for an attractive appearance and an extra touch of sweetness.
