- 500 g white flour
- 200 g grated zucchini
- 150 g grated carrots
- 25 g fresh yeast
- 2 teaspoons sugar
- 300 ml warm milk
- 50 ml olive oil
- 1 teaspoon salt
- 1 egg (optional, for added moisture and flavor)
Instructions:
1. Start by activating the yeast: in a small bowl, dissolve 25 g of fresh yeast with 2 teaspoons of sugar. Add a little warm milk (about 100 ml) and mix gently until the yeast is completely dissolved. Let the mixture sit for 10 minutes until it starts to foam. This step is essential for ensuring optimal rising of the dough.
2. In a large bowl, sift 500 g of flour and add the salt. This step helps aerate the flour and achieve a fine texture for the rolls.

5. Mix the ingredients with a spatula or with your hands until a homogeneous dough forms. Then, knead the dough for about 10 minutes until it becomes elastic and smooth. If the dough is too sticky, you can gradually add a few tablespoons of flour.
6. Form a ball from the dough and place it in a greased bowl, cover it with a clean towel, and let it rise in a warm place for 1 hour or until it doubles in size.
7. Preheat the oven to 180°C. After the dough has risen, turn it out onto a floured surface and divide it into 12 equal pieces. Shape each piece into a ball or roll and place them on a baking tray lined with parchment paper.
8. Let the rolls rise for another 15-20 minutes, then you can brush them with a mixture of beaten egg and water to achieve a golden and shiny crust.
9. Bake the rolls in the preheated oven for 25-30 minutes or until they are golden and sound hollow when tapped on the bottom.
