In this recipe, I will explain step by step how to achieve the perfect potato borscht.

Necessary ingredients:
- 3-4 medium potatoes (approximately 600 g)
- 2 large carrots
- 1 parsley root
- 1 celery root
- 1 large onion
- 2-3 ripe tomatoes
- 1 bell pepper (preferably red or yellow for a more colorful borscht)
- 1 bunch of fresh parsley
- 1 bunch of lovage
- 1 liter of borscht (or to taste)
- 4 tablespoons of oil
- 2500 ml of water
- salt, to taste

The preparation of this borscht begins with preparing the vegetables. Peel the carrots, parsley root, celery root, and onion. Wash them well and chop them finely so they cook evenly. This technique ensures a pleasant texture of the borscht and an intense flavor.

In a large pot, add 2500 ml of water and bring it to a boil. When the water starts to boil, add the chopped vegetables (carrot, parsley, celery, and onion) and a teaspoon of salt. Boil them over medium heat for about 15-20 minutes until they become slightly soft.

Meanwhile, peel the potatoes and cut them into cubes. They will add substance to the borscht, becoming the main ingredient. After the vegetables have boiled a bit, add the potatoes and continue boiling. At this point, it is ideal to add the tomatoes (cut into cubes) and the bell pepper to enhance the flavors.

Once the potatoes are almost cooked (about 20-25 minutes), add the borscht. You can adjust the amount of borscht according to how sour you want the dish to be. Once you’ve added the borscht, let everything boil for another 10-15 minutes, allowing the flavors to blend harmoniously.

Finally, add the chopped fresh parsley and lovage leaves, which will bring an extra freshness and unmistakable taste. Taste the borscht and adjust the salt, if necessary.

To achieve an even more aromatic potato borscht, you can add a teaspoon of sweet paprika or a little ground black pepper. These spices will give a more complex flavor to your dish.
