To prepare this delicious dish of pig nails, we start by ensuring that the ingredients are fresh and of good quality. The first step is to prepare the pig nails. We carefully scorch them over the flame of the stove, making sure to remove all impurities. This process helps to clean them and gives them a better taste. After scorching, we thoroughly clean them with a sharp knife, removing any unwanted parts, and then wash them well under a stream of cold water to ensure they are perfectly clean.
Once the nails are prepared, we cut them lengthwise, but only the skin, to ensure they will cook evenly. We place the cut nails in a large pot, adding enough water to completely cover them. In this water, we add salt, chopped vegetables (carrot, onion, celery), a few bay leaves, and the freshly squeezed juice of a lemon, which will add a touch of freshness. We let it boil over medium heat, stirring occasionally, until the nails become tender and the bones easily detach.
After boiling, we remove the nails from the water and let them cool. It is important to carefully remove the larger bones to keep the shape of the nails as intact as possible. Once cooled, we add salt and pepper to taste, to season them properly.
Then, we prepare a breading system: in one bowl, we beat an egg, in another bowl we place the flour, and in a third bowl the breadcrumbs. We take each piece of nail, first passing it through the flour, ensuring it is evenly covered, then through the beaten egg, and finally through the breadcrumbs. This will create a crispy and golden crust when we fry them.
In a deep frying pan, we heat the oil over medium heat. When the oil becomes hot, we start frying the nails, being careful not to overcrowd them so they fry evenly. We let them brown on each side for a few minutes until they become crispy and have a delicious golden color.
Once ready, we remove them onto a paper towel to absorb the excess oil. We serve the fried nails hot, alongside a fresh salad or yogurt sauces, to complement this savory dish. This recipe is not only tasty but also highly appreciated for its crispy texture and unmistakable aroma.
