Pasca is a traditional Easter dessert, but it can be enjoyed at any time of the year. This recipe offers a delicious combination of ingredients that blend perfectly to create a sweet and aromatic delight. We start by preparing the dough, which will form the base of this dessert. In a buttered or margarine-coated pot, we place a sheet of dough about 2 cm thick. This dough will provide stability and hold the delicious filling.

Around the edge of the pot, we form a crown from braided strips of dough, which will give a rustic and attractive appearance to the pasca. To make these strips, we prepare four strips of dough, each the thickness of a pencil. At one end, we gather all four strips and begin to braid them, alternating two at a time. This technique not only enhances the appearance of the pasca but also adds an interesting texture.

Once we have completed this step, we focus on the filling. In a bowl, we mash the cheese until it becomes a smooth cream. Then, we add the egg yolks and melted butter, but make sure it is cold to avoid altering the composition. After integrating these ingredients, we pour in the sour cream, semolina, and flour, mixing them carefully. Grated orange peel adds a note of freshness, while raisins, which have been soaked in rum or milk for an hour, will bring a pleasant sweetness.

Another essential ingredient is the egg whites, which must be beaten until stiff peaks form. Once they become fluffy, we add the sugar and a tablespoon of rum, continuing to beat until the mixture becomes firm. This egg white foam will give an airy appearance to our filling. Carefully, we fold the foam into the cheese mixture, gently mixing with a whisk or using the folding method to avoid losing the incorporated air.

Once the filling is ready, we return to the dough in the pot. With our hands, we press the dough up the sides, raising it along the edges of the pan. In the center, we pour the cheese cream, leveling it evenly. On top, we place a lattice of dough, which adds a decorative touch. It is important to brush this lattice with beaten egg to achieve a golden and appetizing crust during baking.

Finally, the pasca is ready to be placed in the preheated oven. We bake until golden, and the aroma will spread throughout the house, bringing a festive feeling. Once cooled, the pasca can be served with pleasure alongside loved ones, bringing a touch of tradition and good taste to each slice. This recipe is not just a simple dessert, but a culinary experience that you will want to repeat every time!
