Plum cake is a simple and delicious recipe, perfect for bringing a touch of autumn flavor to every day. This quick dessert is easy to prepare, making it ideal for both an afternoon snack and a refined dessert served at festive meals. Here’s how to achieve a perfect result, step by step.
Ingredients:
- 500 g plums (fresh or canned)
- 25 g fresh yeast
- 250 ml milk
- 100 g margarine (or butter, for a richer taste)
- 150 g sugar
- 500 g flour
- 1 egg
- 1 packet of vanilla sugar
- A pinch of salt
Preparation:
1. Activate the yeast: Start by placing the yeast in a small bowl, adding a few tablespoons of warm milk (not hot, to avoid killing the yeast) and 1-2 tablespoons of sugar. Mix a little and let it activate for 10-15 minutes until it becomes frothy. This step is essential for getting a fluffy dough.
2. Heat the milk and margarine: In a saucepan, heat the remaining milk together with the margarine cut into cubes. Stir until the margarine completely melts, then let the mixture cool slightly.
3. Prepare the dough: In a large bowl, combine the flour, remaining sugar, vanilla sugar, and salt. Make a well in the center and add the activated yeast, egg, and milk mixture with margarine. Start mixing with a spatula or your hands until all the ingredients combine. Then, knead the dough for about 5-10 minutes until it becomes elastic and smooth.
4. Let the dough rise: Form a ball from the dough and place it in a bowl greased with a little oil. Cover the bowl with a clean towel and let it rise in a warm place, away from drafts, for 30-40 minutes or until it doubles in size.
5. Prepare the plums: If using fresh plums, wash them well, remove the pits, and cut them in half. If using canned plums, drain them well and let them dry a bit on a paper towel to avoid excess moisture.
6. Assemble the cake: Preheat the oven to 180°C. Once the dough has risen, turn it out onto a floured surface and roll it out to about 1 cm thick. Transfer the sheet to a baking tray lined with parchment paper. Arrange the plums evenly on the surface of the dough, sprinkling a little sugar on top to caramelize them during baking.
7. Bake the cake: Place the tray in the preheated oven and bake the cake for 30-35 minutes until it becomes golden and nicely browned. Check if it’s baked by inserting a toothpick in the center; if it comes out clean, the cake is ready.
8. Cool and serve: Once the cake has cooled slightly, cut it into portions and serve warm or at room temperature. It’s delicious on its own, but you can add a spoonful of sour cream or vanilla ice cream for extra flavor.
Practical tips:
- You can replace the plums with other seasonal fruits, such as apples or peaches, to add a personal touch to your recipe.
- If you want to add extra flavor, you can add cinnamon or lemon zest to the dough.
- For a less sweet version, reduce the amount of sugar or use natural sweeteners.
