Goulash with Soy

 Ingredients: 1 package of soy cubes, 1 onion, 1 bell pepper (or sweet pepper), 2 carrots, 3 peeled tomatoes, 1 parsley root, 1 teaspoon ground cumin, 1 teaspoon tarragon, 50 ml oil, goulash paste (about 2 tablespoons) or 1 tablespoon sweet paprika, 3-4 slices of hot pepper (if you want the goulash spicier), salt to taste.

To prepare a delicious and nutritious meal, we start by preparing the soy cubes. We boil these cubes in a pot with water and salt or seasoning for no more than 15 minutes. After boiling, we let them drain so that the excess water is removed and the flavors concentrate during cooking.

In the meantime, we focus on chopping the vegetables. We start by peeling the onion, which we chop finely, ensuring that we get uniform pieces for even cooking. Next, we take care of the bell pepper, chopping it finely as well. The carrots are diced or sliced into rounds, depending on preference, and the parsley is finely chopped to add a fresh note to the dish. The tomatoes, which will add acidity and flavor, are peeled and sliced, thus preparing the base of the sauce.

In a large pan, we heat the oil. Once the oil is hot, we add the onion and bell pepper, sautéing them for 1-2 minutes until they become slightly translucent. This step is essential to release the flavors from the vegetables. We continue by adding the sliced carrots and parsley, mixing them well to combine the flavors. We let them sauté until the carrots start to soften, which will take a few minutes.

Once the vegetables have taken on a pleasant texture, we add the gulyas paste or, alternatively, a tablespoon of sweet paprika to enrich the flavor. The chopped tomatoes and drained soy cubes will be the next ingredients added. We mix all the ingredients well, then season with ground cumin and tarragon, which will add a specific and delicious aroma to our dish. We extinguish everything with 3 liters of water, letting it boil over medium heat.

At this point, we add salt and seasoning to taste, as well as slices of hot pepper to give a touch of spiciness. We let it boil until the carrots are fully cooked, and all the flavors have blended harmoniously. When the dish is ready, we serve it hot, enjoying a delicious meal that will delight both the taste buds and the soul. Enjoy your meal!
