- Salt and pepper to taste

Step-by-step instructions:

1. Preparing the offal: Start by boiling the beef offal in a pot of water and salt. Let it boil for about 30 minutes until tender. After boiling, remove it and let it cool slightly, then chop it finely.

2. Sautéing the onions: In a large pan, heat a few tablespoons of oil. Add the finely chopped onions and sauté over medium heat, stirring frequently, until they become golden and translucent. This step adds a delicious flavor to the haggis.

3. Mixing the ingredients: In a large bowl, combine the minced beef with the boiled offal, sautéed onions, boiled eggs (cut into cubes), chopped greens, basil, thyme, salt, and pepper. Mix all the ingredients well until you obtain a homogeneous composition.
