Caesar Dressing

 Ingredients: Makes approximately 140 ml dressing 80 ml extra virgin olive oil 1 organic egg yolk at room temperature 1/2 teaspoon Worcestershire sauce 1 anchovy fillet (adjust to taste) 1 teaspoon freshly squeezed lemon juice 1 clove of garlic 30 g Parmigiano Reggiano freshly ground pepper to taste

To prepare a delicious aromatic paste, we start by gathering all the necessary ingredients. Make sure you have a high-performance blender, as it will transform the ingredients into a fine and homogeneous texture. In a suitably sized bowl, add all the ingredients except for the olive oil. These may include fresh herbs, nuts, cheese, garlic, and of course, anchovies, which will add a deep and salty flavor to the dish.

Once all the ingredients are in the blender, press the pulse button. It is important not to blend everything in one go, but to chop them gradually so that you achieve an even texture, but not completely homogenized. This technique will maintain a bit of the texture of the ingredients, adding extra interest in the end. After the ingredients are finely chopped, start adding the olive oil gradually.

The olive oil will not only bind the ingredients but will also bring a note of flavor, so do not hesitate to use a high-quality one. Continue blending until the mixture becomes creamy and homogeneous, but be careful not to overheat the blender. Once you have achieved the desired consistency, it's time to season the paste. Since anchovies are already salty, it’s important to taste the mixture before adding any extra salt.

After you have achieved the perfect taste, transfer the paste to an airtight container and cover it well. It is recommended to keep it cool in the refrigerator, where it will last up to 3 days. This paste can be used in various ways: as a spread on toasted bread, in sandwiches, or even as part of a cheese and cold cuts platter. Additionally, it can be an excellent ingredient for sauces or dressings, bringing a touch of originality to your dishes.
