Preparation
Step 1: Preparing the blue sponge
Start by preheating the oven to 170°C. In a large bowl, beat the egg whites with a pinch of salt for about 5 minutes until foamy. Gradually add the sugar and vanilla sugar, continuing to mix until the mixture becomes smooth and glossy.
Add the diced butter and mix again. In another bowl, combine the flour with the baking powder. Gradually add this mixture to the egg whites, alternating with the milk, gently folding with a spatula. Finally, tint the batter with the blue food coloring, mixing carefully.

1. Line a 28 cm tray with cling film. Place the blue sponge at the bottom of the tray and soak it with a little prune compote for added moisture.
