Veal soup
To prepare a delicious meat and vegetable soup, the first step is to thoroughly wash the pieces of bone, which will provide a rich flavor and unmistakable aroma. Also, the meat should be carefully washed, then cut into small pieces to cook evenly. In a large pot, we bring water to a boil, and when it starts to bubble, we add the meat and bones. It is essential to skim off the foam that forms on the surface, as it contains impurities and will ensure a clear and appetizing soup.
After we have cleaned the foam, we cover the pot with a lid and let the soup simmer on low heat to allow the flavors to develop. It may be necessary to add hot water along the way to maintain the desired consistency. Meanwhile, we clean the onion, which we chop finely, and then we take care of the root vegetables. The parsnip and carrot are peeled and cut into small cubes to integrate perfectly into the soup. The bell pepper is also cut into small pieces, and the parsley is finely chopped, making sure to remove the stems.
When the meat has boiled for more than half the time, we add the previously prepared vegetables to the pot. It is important to keep some of the chopped parsley to sprinkle at the end for an extra touch of freshness. We let the soup boil together with the vegetables for about 20 minutes. After this interval, we add the peeled and chopped tomatoes, along with the vegetable broth. We taste and season with salt and pepper to achieve a balanced flavor.
Next, we let the soup boil for a few more minutes, and then we add the hot borscht. When the mixture starts to boil again, we add some noodles, which will add a pleasant texture to the soup. We leave the soup on the heat until the noodles are fully cooked. Once the soup is ready, we remove it from the heat and sprinkle the chopped green parsley, which will add a vibrant and fresh appearance.
We let the soup sit covered for 10 minutes to allow the flavors to blend and intensify. Then, we serve with joy, accompanied by a slice of fresh bread or hot pepper for those who prefer a spicier taste. This soup, full of flavor and nutrients, will bring comfort and joy to your table.
