To prepare a delicious crème brûlée with currants, we will start by gathering all the necessary ingredients. Make sure you have on hand 4 fresh eggs, 4 tablespoons of granulated sugar, 500 ml of milk, vanilla essence, the zest of one lemon, and 200 g of currants. These ingredients are essential for achieving a creamy texture and refined taste.

In a large bowl, mix the 4 eggs well together with the 4 tablespoons of sugar and the vanilla essence. It is important to mix vigorously until the mixture becomes homogeneous and fluffy. Then, gradually add the milk, continuing to mix to integrate all the ingredients. The lemon zest adds a fresh fragrance and a hint of acidity, so don’t hesitate to use it generously.

Once you have obtained a uniform mixture, add the washed and dried currants. These will not only enrich the flavor but also add a beautiful color to your dessert. Gently mix to avoid crushing the fruits, ensuring they are evenly distributed in the mixture.

Next, we will prepare the caramelized sugar. In a small saucepan, add a few tablespoons of sugar and place it over medium heat. Stir constantly, being careful not to burn the sugar, as burnt caramel will ruin the final taste of the dessert. When the sugar turns golden and has a liquid consistency, carefully pour it into the mold where you will bake the crème. Move the mold to evenly cover the bottom.

Now, pour the egg and milk mixture over the caramelized sugar, being careful not to disturb the caramel layer. Preheat the oven to 180 degrees Celsius and place the mold in a larger tray, adding hot water to create a bain-marie. This will help the crème bake evenly.

Leave the crème brûlée in the oven for about 45 minutes, or until it becomes firm to the touch, but do not let it dry out. Once done, remove the mold from the oven and let it cool at room temperature. Then, move it to the refrigerator for a few hours, or even overnight, to cool completely.

When serving, you can carefully invert it onto a platter, allowing the caramel to beautifully melt over the crème. You can decorate with a few fresh currants on top for an elegant and appetizing look.
