Ingredients:
- 2 large zucchinis
- 300 g cottage cheese
- 200 g sheep cheese
- 1 bunch of dill or other preferred herbs (parsley, basil)
- 2 eggs
- 150 ml milk
- 150 ml yogurt or sour cream
- 50 g grated cheese or Parmesan for decoration
- salt, pepper to taste
- butter for greasing the baking dish
The first step in preparing the gratinated zucchini is to clean and prepare the zucchinis. Wash them well, then peel them. Use a large grater to grate them. After you’re done, place the grated zucchini in a clean kitchen towel and gently squeeze to remove excess water. This step is crucial, as zucchinis have a lot of water and we want to avoid a too-wet mixture.
In a bowl, mix the crumbled cottage cheese with the grated sheep cheese. Add the dill or chosen herbs, then season with salt, pepper, and, if desired, a bit of vegetable seasoning. This mixture will add an intense and fresh flavor to your dish.
For the creamy sauce, lightly beat the eggs in another bowl, then add the milk and yogurt (or sour cream, if you prefer a richer texture). Mix well so that all ingredients combine.
Now, it’s time to assemble the gratinated zucchini. Grease an oven-safe dish with a bit of butter to prevent sticking. Place a layer of zucchini at the bottom of the dish, followed by a layer of the cheese mixture. Continue alternating layers of zucchini and cheese, finishing with a final layer of zucchini. Pour the egg and milk sauce over everything, ensuring it distributes evenly. Finally, sprinkle the grated cheese or Parmesan on top for a delicious crust.
Preheat the oven to 180 degrees Celsius and bake the dish for about 30 minutes, or until the top is golden and appetizing. It’s important to monitor the gratin, as every oven is different.
