Ingredients for the base:
- 6 eggs (separated into whites and yolks)

Preparation:
1. Start by preparing the base. Preheat the oven to 180°C. Grease a 24 cm round cake pan and line it with parchment paper.
2. In a large bowl, beat the yolks with the sugar using a mixer until the mixture becomes creamy and light yellow. Gradually add the oil while continuing to mix until an emulsion similar to mayonnaise forms. This step is essential for achieving a fluffy base.
3. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. This will help the base rise.
4. Sift the flour together with the baking powder and gradually incorporate it into the yolk mixture, mixing with a spatula. Add the beaten egg whites, gently folding in with an up and down motion to preserve the air in the mixture.
5. Pour the batter into the prepared pan and bake for about 30-40 minutes, or until a tester inserted into the center comes out clean. Let the base cool on a wire rack.
6. Meanwhile, prepare the caramelized pears. Peel the pears and slice them. In a large skillet, add the sugar and heat it over medium heat until it melts and turns golden. Add the butter and mix well. Then, add the pear slices and cinnamon, cooking for 5-7 minutes until the pears become soft and caramelized.
7. For the glaze, melt the dark chocolate in a double boiler and mix it with the heavy cream, achieving a smooth composition.
Assembly:
1. Cut the cooled base into two or three layers, depending on your preference.
2. Place the first layer on a platter and add some of the caramelized pears, then a layer of glaze. Repeat with the other layers.
